一、品種特性及采收 梨的品種不同,耐藏性差異較大,有些品種如巴梨、茄梨、字zi母mu梨li等deng果guo實shi,成cheng熟shu後hou果guo肉rou易yi軟ruan化hua,在zai自zi然ran低di溫wen下xia不bu能neng久jiu存cun,隻zhi有you在zai冷leng藏zang條tiao件jian不bu才cai能neng長chang期qi貯zhu藏zang。一yi些xie成cheng熟shu後hou脆cui肉rou品pin種zhong梨li比bi較jiao耐nai藏zang,各ge地di有you許xu多duo品pin質zhi優you良liang又you耐nai貯zhu藏zang的de品pin種zhong,如ru河he北bei的de鴨ya梨li、雪(xue)花(hua)梨(li),遼(liao)寧(ning)的(de)秋(qiu)白(bai)梨(li),山(shan)東(dong)的(de)長(chang)把(ba)梨(li),吉(ji)林(lin)延(yan)邊(bian)的(de)蘋(ping)果(guo)梨(li),山(shan)西(xi)的(de)油(you)梨(li)和(he)黃(huang)梨(li)等(deng)都(dou)是(shi)較(jiao)耐(nai)貯(zhu)藏(zang)的(de)品(pin)種(zhong)。還(hai)有(you)一(yi)些(xie)梨(li),采(cai)收(shou)時(shi)果(guo)肉(rou)酸(suan)澀(se)粗(cu)糙(cao)必(bi)須(xu)經(jing)過(guo)長(chang)期(qi)貯(zhu)藏(zang),品(pin)質(zhi)改(gai)進(jin)後(hou)才(cai)能(neng)食(shi)用(yong),如(ru)河(he)北(bei)和(he)遼(liao)寧(ning)的(de)安(an)梨(li)和(he)紅(hong)宵(xiao)梨(li),這(zhe)些(xie)梨(li)極(ji)耐(nai)貯(zhu)藏(zang)。
梨的適時采收期為種子顏色由類部變褐,果皮顏色黃略具綠色或綠中帶黃,果肉更度5.5公斤/平方厘米,可溶性固形物10%yishang,jikecaishou。zhuzangqijiaoduanhuojinxinglengzang,keshidangwancai。lipinzhongbutongcaishouqigeyi,yibancaishoujiaozaode,zhuzanghoulansunshijiaoshao,caishoujiaowande,zhuzangzhongyichanshengshenglibinghaihezengjiafulanlv。
二、梨貯藏中的生理病害
1、鴨梨黑心病 除在鴨梨上發生外,雪花梨、長(chang)把(ba)梨(li)上(shang)也(ye)會(hui)發(fa)生(sheng)類(lei)似(si)的(de)黑(hei)心(xin)病(bing)。鴨(ya)梨(li)的(de)黑(hei)心(xin)病(bing)有(you)兩(liang)種(zhong),一(yi)種(zhong)是(shi)貯(zhu)藏(zang)前(qian)期(qi)由(you)於(yu)降(jiang)溫(wen)過(guo)快(kuai)造(zao)成(cheng)低(di)傷(shang)害(hai)而(er)發(fa)生(sheng)黑(hei)心(xin),另(ling)一(yi)種(zhong)則(ze)是(shi)貯(zhu)藏(zang)後(hou)期(qi)由(you)於(yu)衰(shuai)老(lao)引(yin)起(qi)的(de)黑(hei)心(xin)病(bing)。0度低溫引起的黑心病多發生在人貯30~50天,果心發生不同程度的褐變,但果肉仍為白色,果皮保持青綠或黃綠色,不影響梨持外觀。由衰老引起的黑心病多在貯藏到次年2~3yuefenfasheng,guoxinbianhe,guopisezeanhuang,guorousongsan,yanzhongshibufenguorouyebiankuanyigongyoujiujingwei。xuehualizhuzanghouqihuifashenghongrouhekangxin,laiyanglizaizhuzanghouqiguorouyeyifashenghebian。
2、二氧化碳傷害 鴨梨對高三氧化碳敏感,當二氧化碳濃度超過1%時就會發生二氧化碳傷害,鴨梨會產生黑心或果肉空洞。
三、貯藏條件和方法 中國梨貯藏的適宜溫度一般為0度,脆肉梨在貯藏中發生輕微凍結,解凍後果肉的脆度會下降。大多數西洋梨的適宜貯藏溫度為-1度,如巴梨、安久梨等。梨貯藏適宜的相對濕度為85~95%,高濕可防止果實失水,降低自然損耗,梨失水5~7%時,果皮皺縮,影響外觀品質。用塗膜和塑料小包裝密封,可有效降低自然損耗。
1、冷藏 目前梨的冷藏發展非常迅速,冷藏量也在逐年增加。鴨梨冷藏時要注意采用緩慢降溫措施,降溫過快會引起黑心病,開始庫溫保持10~12度,一周後每5~7降1度,以後改為每三天降一度,在35~40天內將庫溫降到0度,並保持0度,不要低於-1度,鴨梨可貯藏8個月,好果率達80%以上。
2、窖藏 在zai梨li產chan地di多duo用yong窖jiao藏zang,將jiang適shi時shi采cai收shou的de梨li,分fen等deng分fen級ji,剔ti除chu病bing傷shang果guo,用yong紙zhi單dan果guo包bao裝zhuang後hou裝zhuang入ru紙zhi臬nie或huo筐kuang中zhong。由you於yu梨li采cai收shou時shi溫wen度du尚shang高gao,一yi般ban不bu直zhi接jie人ren窖jiao先xian在zai窖jiao外wai背bei陰yin處chu預yu貯zhu,因yin為wei此ci時shi的de晝zhou夜ye溫wen差cha大da,外wai界jie氣qi溫wen下xia降jiang較jiao窖jiao溫wen快kuai。預yu貯zhu時shi白bai天tian要yao在zai貨huo堆dui上shang遮zhe陰yin覆fu蓋gai,防fang止zhi暴bao曬shai,晚wan上shang打da開kai覆fu蓋gai物wu放fang風feng,使shi梨li很hen快kuai降jiang溫wen。當dang果guo溫wen和he窖jiao溫wen接jie近jin0度時可入窖,入窖時將不同等級的梨分別堆放,一般不再進行挑選。梨在窖中堆碼時要注意堆間、niejianjiduidesizhoudouyaoliuyoutongfengjianxi。chanpinrukuqianqizhuyaoguanligongzuoshikongzhitongfeng,daorukuwailengliangkongqi,paichukuneirekongqi,jiangdikuneiwendu。cushichanpinjinkuaijiangwen,biyaoshihaikedakaikumenzengjiakongqiliuliang。zhongqizeyifangdongbaowenweizhu。zheyishiqideguanliyaotebiezhuyifanghanbaowen,zaiguanbitongfengxitongdetongshi,shidanggenghuankuneikongqi,zhinengzaibaitianhuozhongwukuwaiqiwengaoyudongjiewendushi,dakaitongqikouzuoshidangdetongfenghuanqi。dangchunjilailinshi,kuwaiqiwenhetuwenzhujianjiasheng,kuneiyinanweichidiwentiaojianshi,zaikaiqijinchuqikouyinrulengkongqitiaojiekuneiwendu,tongfengshijianrengzaiwaijieqiwendiyukuneiwendushijinxing。dangwaijieqiwenjinyibushenggao,yejianwenduyenanyitiaojiedaoshiyidezhuzangdiwenshi,yingdangjishijiangchanpinchukuxiaoshou。
3、氣調貯藏 梨的氣調貯藏可采用12~13%氧和1%以下的二氧化碳,但要預防三氧化碳的累積,會導致果肉或果心褐變。
