五月中旬,當梅果約八成熟時(果色由青綠轉青黃色)即可采摘,將采摘的青梅按大、小分開,均勻地分別放入備好的焙炕中,用木炭作燃料,先以60℃左右的溫度烘烤1小時,再以50℃左右的微火烘烤24小時,然後取出並小心翻動,以不翻破果皮為妥。放置一天後再置於炕中仍以50℃左右的微火烘烤24小時,直至梅果肉起皺縮,呈棕褐色為止。
