2 葡萄破碎除梗
葡萄皮中存在色素、單寧、果膠和香氣成分,果肉中也存在一些香氣成分,而在果梗、種籽中則存在大量的劣質單寧。在破碎時,葡萄破碎度過高,會將大量的劣質單寧帶入葡萄汁中,從而給葡萄酒帶來不良風味。
3 添加輔料

4 酒精發酵
putaojinzihefajiaotongshijinxing,zhegeguochengzuizhuyaoshikongwenhejiankongzuoyong,jinzichengdu,niangzaowendu,hantang,jiujingdudeng,yibanshishiyongbizhongjijiankongbizhongbianhua,tongshiwendubianhuadeng,gongyedashengchanshihouxianggegezhibiaodousuibiandidingshibuxianshide,suoyiyibanzhizuoyixiedingxingdezhibiaofenxi。wanchengjiujingfajiaozhihoujinxingputaojiuheputaopizhadefenli。zhuyiziliuzhiheyazhazhidebutongchuli,heduiputaopizhayazhachengdu。
5 蘋果酸—乳酸發酵
在酒精發酵結束後進行蘋果酸—乳酸發酵,但這不是必須的。蘋果酸—乳酸發酵不但能夠降低葡萄酒的酸度,增加其細菌穩定性,而且會增加葡萄酒口味和香氣的複雜性,改善葡萄酒的風味。
6 陳釀

7 調配

8 後處理階段
