送宰:每批數量適宜,不能過多,不得用棒打;將不同品種、不同顏色的鴨分開,分別送宰,保證羽毛顏色的純潔;點數準確,保證投料數與成品數量相吻合。
屠宰:做到下刀部位準確,不淤血,濾血6-8分鍾,死透後入燙池,以免造成放血不良或活燙而使鴨體發紅。屠宰可分為:刀口屠宰(切斷三管),是從頸下喉部割斷血管、氣管和食管,要求從鴨的下顎部處切割,刀口不得深於0.5厘米,但刀口不能過大和外露;口腔屠宰(斜刺延腦),shijiangyatoubuxiangxiaxiebingguding,lakaizuike,jiangdaojianshenrukouqiang,daojiandadierjingzhuichujieliedehoufang,yongdaojianqieduanjingjingmaiyuqiaozhuangjingmaidelianhechu,jiezheshoudao,tongguoelieyonglijiangdaojianxieciyannao,pohuaishenjingzhongshu,shiyumaoyiyutuoluo,kecushiqizaosi,jianshaozhengzha,bingkeshijirousongchi,fangxuekuaierjing,youbuyiwuran,liyubamao。cifasuiwaibumeiyoudaokou,waiguanzhengqi,danbuyizhangwo,yidanfangxuebuliang,huishijingbuyuxue。
浸燙:yatuzaihouxuyaolijijintang,jiliyongmaokongrezhanglengsuodeyuanli,yongreshuishimaokongpengzhang,yumaorongyibachu,yibaochizaihouyatideguanggu,jintangdeguanjianshigenjuyadepinzhongherilingshidangzhangwoshuiwenhejintangshijian。
手工浸燙,鴨的羽毛覆蓋層厚,水溫比燙鴨時稍高,一般為65-68℃。可把手先在冷水中浸一下,然後伸進熱水中,以感覺水燙而皮膚沒有刺激為好。家庭宰殺可將沸水和冷水按3∶2摻和,也可將宰好的鴨先用冷水淋濕,再在沸水中浸燙。浸燙時間一般為30-60秒(miao)鍾(zhong)。浸(jin)燙(tang)要(yao)在(zai)鴨(ya)完(wan)全(quan)停(ting)止(zhi)呼(hu)吸(xi)而(er)體(ti)溫(wen)又(you)沒(mei)有(you)散(san)失(shi)時(shi)進(jin)行(xing),水(shui)溫(wen)不(bu)能(neng)過(guo)高(gao),浸(jin)燙(tang)時(shi)間(jian)不(bu)能(neng)過(guo)久(jiu)。手(shou)工(gong)浸(jin)燙(tang)要(yao)分(fen)批(pi)燙(tang),即(ji)將(jiang)若(ruo)幹(gan)隻(zhi)屠(tu)宰(zai)後(hou)的(de)鴨(ya)投(tou)入(ru)適(shi)宜(yi)的(de)水(shui)中(zhong),用(yong)木(mu)棒(bang)攪(jiao)拌(ban),30秒鍾後試拔腹部的絲毛和翅隻,如果易脫落,則將鴨拿到板上拔毛;也可逐隻浸燙,即抻起鴨的兩腳倒懸於水中浸沒,上下左右攪動十多次,使熱水滲透毛孔,再逐隻拔毛。
機械浸燙,即采用蒸汽熱水溫,使水溫保持在規定範圍內(61-62℃)連續進行。機械浸燙可控製和調節水溫,又能定時換水,保持了清潔衛生,但也要注意水溫和浸燙時間不能過長或過短。
脫毛:屠宰後的鴨經過浸燙即可去毛,要求時間快,去毛幹淨。脫毛有手工脫毛與機械脫毛。手工去毛要根據羽毛的性能、特點和分布的位置依序進行。翅上的毛隻片長,根深,要先拔除;背毛皮緊,脫毛時皮易受損,可用推脫;胸脯毛鬆軟,彈性大,可用手抓除;尾部羽毛硬,根深,且尾部富有脂肪,容易滑動,要用手指拔除;頸jing部bu羽yu毛mao比bi較jiao鬆song軟ruan,容rong易yi破po皮pi,要yao用yong手shou握wo住zhu鴨ya頸jing,略lve帶dai轉zhuan動dong,逆ni毛mao倒dao搓cuo。機ji械xie去qu毛mao有you多duo種zhong形xing式shi,特te點dian是shi去qu毛mao快kuai,皮pi膚fu不bu易yi受shou損sun傷shang,且qie大da小xiao毛mao都dou可ke去qu淨jing,僅jin有you少shao量liang翅chi隻zhi和he尾wei隻zhi殘can留liu,需xu經jing人ren工gong整zheng理li。脫tuo毛mao後hou,除chu去qu鴨ya的de腳jiao皮pi和he嘴zui,以yi保bao持chi鴨ya體ti全quan身shen潔jie白bai幹gan淨jing。
