選用成熟黃桃,剔除機械損傷果、腐爛果和殘次果。用清水洗淨表皮汙物、倒人90~95℃、4%~6%的氫氧化鈉溶液中浸泡30~60秒,取出用清水衝洗,反複搓擦、去皮。再將黃桃倒人0.3%的鹽酸溶液中,中和2~3分鍾。沿縫合線用刀對切,挖去果核,在90~100℃的熱水中預煮4~8分鍾。煮後急速冷卻,用小刀削去毛邊和殘留皮屑,挖去斑疤,並選取果形完整、表麵光滑、肉質金黃的桃塊裝罐。每罐裝果肉330克,注25%的糖水180克。排氣後封罐,在沸水中煮20分鍾殺菌。殺菌後用冷水分段冷卻至35~40℃,擦去罐頭表麵水分,放在20℃左右的倉庫中貯存7天,經檢驗合格即可貼商,裝箱。
