我國水產品的包裝多年來幾乎沒有變化,絕大多數新鮮水產品隻是用塑料箱盛裝後運輸到市場散售;冷凍魚類十幾斤一坨,用PE膜(mo)和(he)瓦(wa)楞(leng)紙(zhi)箱(xiang)簡(jian)單(dan)包(bao)裝(zhuang),在(zai)市(shi)場(chang)上(shang)解(jie)凍(dong)零(ling)售(shou),很(hen)多(duo)水(shui)產(chan)品(pin)在(zai)銷(xiao)售(shou)時(shi)已(yi)經(jing)不(bu)再(zai)新(xin)鮮(xian),大(da)大(da)降(jiang)低(di)了(le)其(qi)應(ying)有(you)的(de)價(jia)值(zhi)。水(shui)產(chan)品(pin)是(shi)沿(yan)海(hai)地(di)區(qu)得(de)天(tian)獨(du)厚(hou)的(de)優(you)勢(shi)產(chan)品(pin),重(zhong)視(shi)其包裝可以充分利用這一地域優勢,創出本地區的名牌產品,變優勢為利益。
水產品的特點是鮮活味美,但易於腐敗,要根據不同種類水產品的特性進行合理包裝。
水產品的大宗貨魚類
魚(yu)類(lei)的(de)體(ti)內(nei)外(wai)細(xi)菌(jun)多(duo),而(er)本(ben)身(shen)含(han)有(you)的(de)天(tian)然(ran)免(mian)疫(yi)素(su)卻(que)較(jiao)少(shao),魚(yu)肉(rou)中(zhong)的(de)酶(mei)有(you)分(fen)解(jie)蛋(dan)白(bai)質(zhi)的(de)作(zuo)用(yong),致(zhi)使(shi)肌(ji)肉(rou)組(zu)織(zhi)變(bian)軟(ruan),新(xin)鮮(xian)程(cheng)度(du)下(xia)降(jiang)。當(dang)分(fen)解(jie)產(chan)物(wu)達(da)到(dao)一(yi)定(ding)程(cheng)度(du)時(shi),魚(yu)肉(rou)還(hai)會(hui)發(fa)出(chu)臭(chou)味(wei),並(bing)為(wei)細(xi)菌(jun)進(jin)一(yi)步(bu)滋(zi)生(sheng)與(yu)繁(fan)殖(zhi)提(ti)供(gong)了(le)有(you)利(li)條(tiao)件(jian)。此(ci)外(wai),魚(yu)肉(rou)極(ji)易(yi)氧(yang)化(hua),以(yi)至(zhi)肉(rou)質(zhi)變(bian)壞(huai)、退色或變色。僅靠冷凍與冷藏的辦法對魚類產品的保鮮作用還不夠理想,若要取得更好的保鮮效果,可借鑒以下包裝措施。
(1)魚yu類lei的de包bao裝zhuang應ying使shi用yong剛gang性xing容rong器qi。魚yu肉rou組zu織zhi本ben來lai就jiu脆cui弱ruo,經jing凍dong結jie後hou,魚yu內nei組zu織zhi會hui受shou到dao一yi定ding的de傷shang害hai,包bao裝zhuang時shi若ruo受shou到dao過guo度du的de擠ji壓ya就jiu會hui造zao成cheng魚yu體ti破po碎sui以yi及ji魚yu肉rou組zu織zhi的de進jin一yi步bu受shou損sun,這zhe不bu僅jin影ying響xiang到dao外wai觀guan,而er且qie損sun傷shang部bu位wei的de肉rou質zhi易yi變bian壞huai影ying響xiang食shi用yong。同tong時shi,損sun傷shang部bu分fen在zai解jie凍dong時shi,細xi菌jun極ji易yi滋zi生sheng繁fan殖zhi。顯xian然ran,使shi用yong不bu易yi破po損sun、不易塌陷的剛性包裝容器,有利於使魚類產品在運輸與搬運當中免遭各種機械損傷,從而保持原有的形態和品質。
(2)盡(jin)量(liang)減(jian)少(shao)魚(yu)類(lei)產(chan)品(pin)水(shui)分(fen)損(sun)失(shi)。魚(yu)肉(rou)不(bu)僅(jin)在(zai)凍(dong)結(jie)過(guo)程(cheng)中(zhong)水(shui)分(fen)有(you)所(suo)損(sun)失(shi),而(er)且(qie)在(zai)冷(leng)藏(zang)中(zhong)因(yin)魚(yu)體(ti)表(biao)麵(mian)細(xi)小(xiao)冰(bing)晶(jing)的(de)升(sheng)華(hua),也(ye)會(hui)使(shi)魚(yu)肉(rou)失(shi)掉(diao)水(shui)分(fen),這(zhe)將(jiang)使(shi)魚(yu)肉(rou)不(bu)斷(duan)減(jian)重(zhong)並(bing)降(jiang)低(di)新(xin)鮮(xian)度(du)。同(tong)時(shi),由(you)於(yu)魚(yu)體(ti)表(biao)麵(mian)水(shui)分(fen)蒸(zheng)發(fa)的(de)不(bu)斷(duan)深(shen)入(ru),將(jiang)由(you)表(biao)及(ji)裏(li)形(xing)成(cheng)一(yi)定(ding)厚(hou)度(du)的(de)海(hai)綿(mian)層(ceng),使(shi)魚(yu)肉(rou)失(shi)去(qu)原(yuan)有(you)的(de)味(wei)道(dao)和(he)營(ying)養(yang)成(cheng)分(fen)。因(yin)此(ci),用(yong)具(ju)有(you)阻(zu)隔(ge)水(shui)蒸(zheng)汽(qi)性(xing)能(neng)的(de)包(bao)裝(zhuang)材(cai)料(liao)進(jin)行(xing)密(mi)封(feng)包(bao)裝(zhuang),可(ke)以(yi)防(fang)止(zhi)魚(yu)肉(rou)在(zai)冷(leng)凍(dong)、冷(leng)藏(zang)及(ji)銷(xiao)售(shou)過(guo)程(cheng)中(zhong)的(de)水(shui)分(fen)散(san)失(shi),從(cong)而(er)保(bao)持(chi)其(qi)原(yuan)有(you)的(de)鮮(xian)度(du)。須(xu)注(zhu)意(yi)的(de)是(shi),包(bao)裝(zhuang)內(nei)所(suo)凍(dong)結(jie)的(de)魚(yu)類(lei)產(chan)品(pin)之(zhi)間(jian)存(cun)在(zai)著(zhe)多(duo)餘(yu)的(de)空(kong)隙(xi),魚(yu)體(ti)的(de)水(shui)分(fen)易(yi)蒸(zheng)發(fa),使(shi)魚(yu)肉(rou)脫(tuo)水(shui),在(zai)包(bao)裝(zhuang)內(nei)部(bu)出(chu)現(xian)凝(ning)霜(shuang)。因(yin)此(ci),應(ying)盡(jin)量(liang)減(jian)少(shao)包(bao)裝(zhuang)容(rong)器(qi)內(nei)部(bu)的(de)空(kong)隙(xi)。若(ruo)以(yi)塑(su)料(liao)薄(bo)膜(mo)袋(dai)包(bao)裝(zhuang),則(ze)應(ying)使(shi)薄(bo)膜(mo)緊(jin)貼(tie)魚(yu)類(lei)產(chan)品(pin)。
(3)caiyongzhenkongbaozhuangdengfangyanghuashouduan。yuleichanpinhanyoububaohezhifangsuan,youdeyuleihanlianghengao。dangqiyanghuahouhuishiyuroubianweihesebingbianwei。caiyongbaozhuangchulishijiafangyanghuajidefangfasuiranyouyidingdexiaoguo,danyehuiduirouzhichanshengyidingdefuzuoyong。ercaiyongzhenkongbaozhuangzekequdejiaohaodebaoxianxiaoguo。yudezhenkongbaozhuangxujiangbaozhuangrongqineidekongqichouchu,yinerkeshisuliaobomodaijintieyuleichanpin,zheduijianshaobaozhuangtijiyuneibukongxijiweiyouli。weilefangyanghua,zhenkongbaozhuangbixucaiyongtouyangxingdidebaozhuangcailiao,bingjiangbaozhuangrongqiyanmifengkou,yigejuebaozhuangwaibudeyangqi。
(4)製造“人造空氣”,fangzhiyuleichanpindeyanghua,yizhixijundeshengchanghefanzhi。suoweirenzaokongqi,shizhizengjiaeryanghuatanhuodanqihanliangdekongqi。ruguojiangyuleichanpinzhiyueryanghuatannongduwei10%dekongqizhong,yinqiyanghanliangxiangduijiaodi,bujinkeyitigaodiwenlengzangxiaoguo,erqiezaichangwentiaojianxiayeyoujiaohaodebaoxianxiaoguo。zailengkuzhong,shixianrengongkongqidehuanjing,xuyaodaxingtiaoqishebei,qiyunzhuanchengbengao;而er在zai包bao裝zhuang容rong器qi內nei實shi現xian氣qi調tiao就jiu簡jian單dan多duo了le,僅jin需xu充chong氣qi包bao裝zhuang機ji,就jiu可ke將jiang包bao裝zhuang內nei的de空kong氣qi抽chou出chu一yi部bu分fen,再zai充chong入ru一yi種zhong或huo多duo種zhong保bao護hu性xing氣qi體ti。這zhe樣yang無wu論lun在zai冷leng藏zang還hai是shi在zai銷xiao售shou過guo程cheng中zhong,都dou能neng有you效xiao地di保bao護hu魚yu類lei產chan品pin的de品pin質zhi。
(5)避免紫外線照射。紫外線有促進魚類產品氧化的作用(如日光、燈光等都含有紫外線成分)並bing會hui使shi魚yu肉rou升sheng溫wen,這zhe些xie不bu利li影ying響xiang在zai魚yu類lei產chan品pin置zhi於yu冷leng藏zang陳chen列lie中zhong展zhan銷xiao尤you為wei明ming顯xian。對dui此ci,魚yu類lei產chan品pin的de包bao裝zhuang可ke采cai用yong不bu透tou明ming的de材cai料liao來lai防fang止zhi紫zi外wai線xian的de侵qin入ru。此ci外wai,印yin刷shua油you墨mo可ke以yi阻zu止zhi90%紫外線的通過。所以,在透明材料表麵用油墨多印一些圖文之類,也可以起到遮光的作用。
小批量魚類的包裝
對於小批量、低產量的高檔水產品,開發其保鮮包裝更有價值。目前,國際上對水產品的保鮮包裝比較重視,新的保鮮包裝方法較多,現介紹如下:
(1) 魚類的保鮮方法。美國發明了一種魚類保鮮法:將剛捕到的魚裝入塑料袋,袋內注入混合氣體(其中二氧化碳60%、氧氣21%、氮氣19%),密封包好,然後將包裝好的鮮魚放入普通倉庫內。4個星期後,魚類的外觀和味道都沒有改變,就像剛捕到的一樣。
(2) huoyuguantou。ribenshichangshangxinchuxianleyizhonghuoyuguantou,zuofashijianghuoyuyongyizhongmazuiyejinpaozhihunmihouzhuangruguantou,zailiangtianneibuhuisi。pengtiaoqian,zhiyaoquchuguantouneideyufangruqingshuizhong,10分鍾左右魚就會蘇醒。這種活魚罐頭攜帶方便,清潔衛生,味道鮮美。
(3) 運(yun)送(song)活(huo)蝦(xia)包(bao)裝(zhuang)。日(ri)本(ben)研(yan)製(zhi)了(le)一(yi)種(zhong)運(yun)送(song)活(huo)蝦(xia)的(de)專(zhuan)門(men)包(bao)裝(zhuang)容(rong)器(qi),該(gai)包(bao)裝(zhuang)容(rong)器(qi)用(yong)聚(ju)乙(yi)烯(xi)作(zuo)內(nei)層(ceng),用(yong)泡(pao)沫(mo)聚(ju)苯(ben)乙(yi)烯(xi)作(zuo)外(wai)層(ceng),在(zai)兩(liang)層(ceng)之(zhi)間(jian)放(fang)入(ru)碎(sui)冰(bing)。內(nei)層(ceng)要(yao)防(fang)止(zhi)漏(lou)水(shui),外(wai)層(ceng)要(yao)防(fang)止(zhi)碰(peng)損(sun)。在(zai)活(huo)蝦(xia)活(huo)動(dong)的(de)聚(ju)乙(yi)烯(xi)內(nei)槽(cao)裏(li),裝(zhuang)入(ru)殺(sha)菌(jun)消(xiao)毒(du)的(de)海(hai)水(shui)並(bing)灌(guan)入(ru)一(yi)定(ding)量(liang)的(de)氧(yang)氣(qi),然(ran)後(hou)用(yong)蓋(gai)封(feng)嚴(yan),即(ji)可(ke)運(yun)送(song)。采(cai)用(yong)這(zhe)種(zhong)方(fang)法(fa),即(ji)使(shi)在(zai)外(wai)部(bu)氣(qi)溫(wen)高(gao)達(da)40℃的條件下,在24小時內,活蝦的生存率還可保持在90%以上。
(4) 牡(mu)蠣(li)保(bao)鮮(xian)法(fa)。牡(mu)蠣(li)是(shi)一(yi)種(zhong)舉(ju)世(shi)聞(wen)名(ming)的(de)美(mei)味(wei)海(hai)鮮(xian)食(shi)品(pin),但(dan)出(chu)水(shui)後(hou)很(hen)快(kuai)死(si)亡(wang),且(qie)易(yi)被(bei)李(li)斯(si)特(te)氏(shi)菌(jun)汙(wu)染(ran)而(er)變(bian)質(zhi)腐(fu)爛(lan)。新(xin)西(xi)蘭(lan)海(hai)洋(yang)漁(yu)業(ye)研(yan)究(jiu)所(suo)的(de)研(yan)究(jiu)人(ren)員(yuan)發(fa)明(ming)了(le)一(yi)種(zhong)新(xin)工(gong)藝(yi),可(ke)使(shi)生(sheng)牡(mu)蠣(li)加(jia)工(gong)後(hou)變(bian)成(cheng)一(yi)種(zhong)既(ji)能(neng)長(chang)期(qi)存(cun)貯(zhu)又(you)能(neng)保(bao)持(chi)其(qi)鮮(xian)味(wei)。該(gai)工(gong)藝(yi)是(shi)將(jiang)剛(gang)從(cong)海(hai)裏(li)捕(bu)撈(lao)上(shang)來(lai)的(de)活(huo)牡(mu)蠣(li)洗(xi)淨(jing)泥(ni)沙(sha)後(hou),立(li)即(ji)進(jin)行(xing)巴(ba)氏(shi)滅(mie)菌(jun),溫(wen)度(du)為(wei)100℃,壓力為1.3kg/㎡,zheyangkeyishasifuzhezaimulikeneidexijun,ranhoujiangmiejunhoudemulijinxingzhenkonglvboxisubaozhuang,youyuzaijiayamiejunshimulikebingweidakai,guqizhongdexianzhiquanbubaoliuzaikenei。xiaofeizhegoumaihou,yongweibolujiare2~3分鍾,即可品嚐到美味的烤牡蠣。
