從上表可以看出,全麥粉的粗細度至少要達到CB46(116目)以上,其適口性才能滿足要求。因此,加工全麥粉的設備應具備將物料粉碎成粗細度在116目以上的能力。

1.3包裝儲存
全麥粉中所含小麥胚芽的營養價值很高,含有豐富的維生素和礦物質,小麥中8%的蛋白質、20%的脂肪、64%的維生素B1、26%的維生素B2、21%的維生素B6都集中在胚芽裏。其中的脂肪大多為不飽和脂肪酸,很容易氧化變質,從而影響麵粉的質量;再者,麩皮粉碎後各類酶很容易被活化,也會影響麵粉質量。因此,全麥粉應儲存在陰涼幹燥處,一般保質期為30天,夏季較短,其它季節略長,供應家庭的全麥粉應為10kg以下的小包裝。
