(一)適貯條件

(二)貯藏方法
①冬筍貯藏
一是埋藏,嚴格挑選,剔除破損、幹癟和受凍發軟的筍,短期貯可在室外陰涼處與濕沙土層積堆藏,堆高約1米左右,上麵覆蓋3~6厘米厚的沙土,再蓋上稻草,防止日曬和雨淋。埋冬筍時,須連筍殼豎放在濕沙堆內,可貯1個ge月yue以yi上shang時shi間jian。如ru需xu較jiao長chang時shi間jian貯zhu藏zang,應ying在zai室shi外wai挖wa坑keng,然ran後hou將jiang選xuan好hao的de冬dong筍sun與yu沙sha土tu層ceng積ji在zai坑keng內nei,最zui後hou覆fu上shang一yi層ceng厚hou土tu,再zai蓋gai上shang稻dao草cao。切qie忌ji不bu能neng用yong塑su料liao薄bo膜mo覆fu蓋gai和he潑po水shui保bao濕shi,以yi防fang變bian質zhi腐fu爛lan。
二是鹽水浸藏,將冬筍整株置於鹹菜缸(或地)內,用濃鹽水浸債,可貯2個月左右,筍肉品質和筍殼顏色均不改變。食用時須經清水浸泡脫鹽。
三是保鮮劑處理貯,先用 25%亞硫酸鈉、 30%碳酸氫鈉、10%氧化鈣、40%大da蒜suan提ti取qu液ye配pei製zhi保bao鮮xian劑ji,然ran後hou將jiang挑tiao選xuan的de切qie口kou較jiao平ping整zheng的de帶dai筍sun殼ke竹zhu筍sun用yong保bao鮮xian劑ji浸jin泡pao處chu理li切qie口kou,再zai用yong液ye體ti石shi蠟la塗tu抹mo切qie口kou,裝zhuang入ru塑su料liao網wang袋dai在zai室shi內nei架jia擺bai,可ke防fang黴mei並bing減jian少shao失shi水shui。在zai10~15℃條件下,可貯1個月以上時間。
②春筍貯藏
春(chun)筍(sun)采(cai)收(shou)正(zheng)值(zhi)高(gao)溫(wen)到(dao)來(lai),筍(sun)體(ti)正(zheng)處(chu)在(zai)生(sheng)長(chang)發(fa)育(yu)旺(wang)期(qi),體(ti)內(nei)生(sheng)理(li)活(huo)動(dong)十(shi)分(fen)旺(wang)盛(sheng),需(xu)通(tong)過(guo)低(di)溫(wen)冷(leng)藏(zang)來(lai)控(kong)製(zhi)衰(shuai)變(bian)。具(ju)體(ti)做(zuo)法(fa)是(shi)將(jiang)經(jing)挑(tiao)選(xuan)的(de)新(xin)采(cai)收(shou)春(chun)筍(sun),先(xian)送(song)入(ru)冷(leng)庫(ku)上(shang)架(jia)或(huo)裝(zhuang)筐(kuang)堆(dui)碼(ma)預(yu)冷(leng)後(hou),再(zai)裝(zhuang)入(ru)0.02~0.03毫米厚的聚乙烯塑料袋內,紮口密封,入冷庫上架擺放,控製冷庫0~l℃恒定溫度,並維持相對濕度90%-95%,可貯藏保鮮 1個月以上時間。
