漂洗 先用清水洗淨殼麵泥土和黑汙,然後進行漂洗。方法是:先用少量溫水將漂白粉化開,然後加入60~80倍的水(最好用瓷質容器),將核桃放入漂白液中攪拌5~8分鍾,當殼麵變白時撈出洗淨。
晾曬 核桃堅果漂洗後,不可在陽光下曝曬,以免核殼破裂,核仁變質。洗好的堅果可以在竹箔上陰幹或烘幹(烘幹不能用作種子)。陰幹時攤放厚度不應超過兩層,過厚容易發熱,使核仁變質,也不易幹燥。秋雨連綿時,最好用烘幹。烘幹時攤放厚度不宜超過15厘米,過厚不便翻動,烘烤也不均勻,易出現上焦下濕。烘烤溫度至關重要。剛上炕時堅果濕度大,溫度以25℃~30℃為宜,四五成幹時溫度升至35℃~40℃,待七八成幹時,溫度降至30℃,最後用文火烤幹為止。越接近幹燥,翻動越要勤。
