濕法加工芝麻仁工藝路線如下:
原料芝麻→清理→浸泡→脫皮→皮仁分離→脫水→烘幹→精選→包裝→成品

2水洗芝麻仁生產關鍵工序的改進
2.1浸泡工序
浸jin泡pao的de目mu的de是shi使shi芝zhi麻ma皮pi層ceng吸xi水shui膨peng脹zhang,利li於yu從cong仁ren上shang剝bo離li。本ben項xiang目mu采cai用yong堿jian水shui溶rong液ye,在zai一yi定ding溫wen度du下xia浸jin泡pao芝zhi麻ma原yuan料liao,加jia快kuai了le水shui對dui芝zhi麻ma皮pi層ceng的de滲shen透tou速su率lv,使shi浸jin泡pao時shi間jian從cong原yuan來lai的de2h—4h,減少到0.5左右,縮短了生產周期。同時,堿性浸泡液鈍化了芝麻皮層中的色素成分,保證了芝麻仁的白度。
2.2脫皮工序

2.3皮仁分離工序

3 水洗芝麻仁企業質量標準
水洗芝麻仁產品質量見附表。
目前,芝麻仁產品尚無國家標準,這裏介紹我們為一家企業製定的出口標準供參考。粘皮率:稱取芝麻仁樣品2.5g(約1000粒),數出芝麻總數並數出粘有占芝麻仁表麵積十分之一以上皮的芝麻仁數,按下列公式計算出粘皮率。
粘皮率=(粘皮芝麻數/芝麻仁總數)×100%
異色粒:100粒芝麻仁中的異色粒。
