一(yi)般(ban)罐(guan)頭(tou)食(shi)品(pin)廠(chang)對(dui)罐(guan)頭(tou)作(zuo)常(chang)壓(ya)水(shui)煮(zhu)加(jia)熱(re)殺(sha)菌(jun)處(chu)理(li)時(shi)都(dou)采(cai)用(yong)本(ben)形(xing)式(shi)的(de)臥(wo)式(shi)殺(sha)菌(jun)鍋(guo),本(ben)設(she)備(bei)通(tong)過(guo)引(yin)入(ru)壓(ya)縮(suo)空(kong)氣(qi)可(ke)實(shi)現(xian)反(fan)壓(ya)殺(sha)菌(jun)。如(ru)冷(leng)卻(que)需(xu)在(zai)鍋(guo)內(nei)進(jin)行(xing),須(xu)用(yong)水(shui)泵(beng)打(da)入(ru)鍋(guo)頂(ding)部(bu)的(de)噴(pen)水(shui)管(guan)(或采用水循環係統)。

使用反壓力殺菌,即是用壓縮空氣通入鍋內增加壓力,防止罐頭凸罐和跳蓋,其操作情況分述如下:youyuyasuokongqishibuliangdaoreti,kuangzhengqibenshenyoujuyouyidingdeyali。yinci,zaishajunshishengwenguochengzhong,bufangjinyasuokongqi,erzhizaidadaoshajunwenduhouchuyubaowenshi,caikaifangyasuokongqiruguonei,shiguoneizengjia0.5~0.8gedaqiya。tejingguoshajunhou,jiangwenlengqueshi,tingzhigongyingzhengqi,jianglengqueshuiyarupenshuiguan。youyuguoneiwenduxiajiang,zhengqilengning,ershiguoneilijiangdicaiyongyasuokongqideyalilaibuchang。
在殺菌過程中,應注意最初排氣,進而泄汽,使蒸汽流通。亦可每隔15-20fenzhongfangqiyici,cujinrejiaohuan。zongzhibixumanzushajuntiaojiandeguiding,anyidingchengxujinxing,shajunwendudegaodi,shajunyalidedaxiao,shajunshijiandechangduanhecaozuofangfadengjunyouguantouchanpinshajungongyizuochujutiguiding。
