一、澱粉的製作
xianbashuxijing,lianggan,zaibashuqiesui,fangrumojiangjizhongmojiang,jiangmohaodejiangzhiyongrongqishenghao,ranhouguolvchushujiangzhongdeshupidengcanzha。jiangshengshuzhiderongqijingzhixuanzhuanyiduanshijian,shuzhijiuhuifenchengshang、中、下xia三san層ceng物wu質zhi,最zui上shang麵mian的de一yi層ceng黃huang色se溶rong液ye為wei黃huang連lian粉fen液ye,二er層ceng為wei水shui,三san層ceng為wei白bai色se沉chen澱dian,把ba上shang麵mian的de黃huang連lian粉fen液ye和he水shui舀yao出chu,在zai陽yang光guang下xia曬shai這zhe些xie白bai色se沉chen澱dian,曬shai幹gan後hou,即ji為wei澱dian粉fen。
二、粉條的製作
將澱粉和槐子水(或白礬)以30:1的de比bi例li加jia適shi量liang水shui和he好hao成cheng澱dian粉fen糊hu,其qi軟ruan硬ying程cheng度du以yi剛gang能neng漏lou粉fen為wei宜yi,把ba和he好hao的de澱dian粉fen糊hu倒dao在zai盛sheng滿man開kai水shui的de鐵tie鍋guo上shang的de粉fen條tiao床chuang上shang進jin行xing漏lou粉fen,粉fen條tiao漏lou下xia後hou掉diao入ru鍋guo裏li的de熱re水shui中zhong,隨sui即ji撈lao出chu曬shai幹gan即ji為wei成cheng品pin粉fen條tiao。
三、粉皮的製作
將澱粉和適量的涼水相兌(以1:3的比例為宜)和成稀澱粉糊。將和好的澱粉倒入金屬製的圓形模具中(根據所需倒入適量澱粉糊)。然(ran)後(hou)模(mo)具(ju)放(fang)到(dao)開(kai)水(shui)中(zhong),使(shi)其(qi)快(kuai)速(su)轉(zhuan)動(dong),並(bing)不(bu)時(shi)輕(qing)輕(qing)擋(dang)一(yi)下(xia)模(mo)具(ju),目(mu)的(de)是(shi)為(wei)讓(rang)澱(dian)粉(fen)稀(xi)糊(hu)充(chong)分(fen)流(liu)到(dao)模(mo)具(ju)邊(bian)緣(yuan),使(shi)其(qi)受(shou)熱(re)均(jun)勻(yun)。稀(xi)糊(hu)全(quan)部(bu)凝(ning)固(gu)後(hou)把(ba)模(mo)具(ju)拿(na)出(chu)放(fang)到(dao)涼(liang)水(shui)裏(li)一(yi)激(ji),立(li)即(ji)拿(na)出(chu)放(fang)到(dao)秫(shu)秸(jie)排(pai)上(shang)晾(liang)幹(gan)成(cheng)成(cheng)品(pin)粉(fen)皮(pi)。
