將小豆充分浸泡後,先煮30-40分(fen)鍾(zhong),倒(dao)掉(diao)煮(zhu)汁(zhi),然(ran)後(hou)繼(ji)續(xu)煮(zhu),煮(zhu)至(zhi)用(yong)手(shou)能(neng)擠(ji)壓(ya)為(wei)止(zhi)。全(quan)部(bu)約(yue)一(yi)個(ge)小(xiao)時(shi)左(zuo)右(you)。將(jiang)水(shui)分(fen)充(chong)分(fen)擠(ji)出(chu)後(hou)把(ba)豆(dou)研(yan)碎(sui),用(yong)篩(shai)或(huo)麻(ma)布(bu)過(guo)濾(lv),徹(che)底(di)將(jiang)豆(dou)皮(pi)分(fen)離(li),這(zhe)道(dao)工(gong)序(xu)也(ye)可(ke)以(yi)使(shi)用(yong)豆(dou)餡(xian)過(guo)濾(lv)機(ji)。然(ran)後(hou)靜(jing)置(zhi)於(yu)裝(zhuang)滿(man)水(shui)的(de)箱(xiang)中(zhong),使(shi)其(qi)沉(chen)澱(dian),將(jiang)澄(cheng)在(zai)上(shang)麵(mian)的(de)部(bu)分(fen)拋(pao)掉(diao),裝(zhuang)入(ru)布(bu)袋(dai)將(jiang)水(shui)分(fen)擠(ji)出(chu)。這(zhe)是(shi)生(sheng)豆(dou)餡(xian)。生(sheng)豆(dou)餡(xian)中(zhong)加(jia)入(ru)砂(sha)糖(tang),一(yi)麵(mian)攪(jiao)拌(ban),一(yi)麵(mian)熬(ao)製(zhi)成(cheng)豆(dou)沙(sha)餡(xian),將(jiang)生(sheng)豆(dou)餡(xian)仔(zai)細(xi)地(di)加(jia)以(yi)幹(gan)燥(zao)就(jiu)製(zhi)成(cheng)幹(gan)豆(dou)餡(xian)粉(fen)。
