原料配方 去內髒雞100公斤 食鹽6~7公斤 白糖1公斤 花椒麵200~300克 五香粉100克
製作方法 在雞頸上(緊靠頭部)shayixiaokou,fangganjingxue,zhuyibuyaowuranyumao,yingxiangmeiguan。zaijingbeibukaiyixiaokou,quchusuzi。zaijidangchukaiyixiaokou,taojingneizang,tebiezhuyiwajingjifeijiruanyinghouguan,yimianfubaibianzhi。yongganjingbujiangfuneicaganjing。ranhouanwaquneizanghoudejizhongliang,bashiyanchaorelengquehou,jiabaitang、花椒麵、五香粉拌和,先取一小撮塞入雞喉管口,用手輕輕順頸往下理,再用小刀從腹腔內把雞腿劃開一小口(注意不能劃透,以免傷皮),用一小撮輔料擦入縫中,然後用手將輔料在雞腹腔內抹擦均勻。進味後,用幹燥木炭一二節放入腹內吸收水分,倒掛腳醃潰3~4天(不能堆碼,以免鹽水汙染羽毛),再用麻繩穿雞鼻掛在陰涼通風幹燥處,10天左右即為成品。
