貽貝,又名“紫貽貝”,北方稱海虹。瓣鰓綱,貽貝科,貝殼中等大,一般殼長6-8厘li米mi,呈cheng楔xie形xing,頂ding端duan尖jian,腹fu緣yuan略lve直zhi,背bei緣yuan弧hu形xing,小xiao月yue麵mian不bu明ming顯xian。殼ke薄bo,表biao麵mian紫zi黑hei色se,具ju光guang澤ze殼ke內nei麵mian灰hui白bai色se,或huo淺qian藍lan色se,具ju珍zhen珠zhu光guang澤ze。生sheng長chang紋wen細xi,明ming顯xian,自zi頂ding部bu起qi成cheng環huan形xing生sheng長chang,自zi殼ke頂ding至zhi殼ke後hou緣yuan常chang有you不bu明ming顯xian的de放fang射she線xian,以yi足zu絲si附fu著zhe於yu他ta物wu上shang,分fen布bu於yu我wo國guo黃huang、渤海,一般生活在低潮線至水深3米左右水色清澈的岩礁上。產卵期較長,一般自10月到翌年5月間皆能產卵,1958年nian起qi,我wo國guo采cai用yong延yan繩sheng式shi浮fu筏fa養yang殖zhi,立li體ti利li用yong水shui體ti,單dan產chan大da大da提ti高gao,並bing且qie從cong北bei方fang沿yan海hai發fa展zhan到dao南nan方fang沿yan海hai,肉rou可ke供gong鮮xian食shi,加jia工gong成cheng熟shu幹gan品pin稱cheng之zhi為wei淡dan菜cai,濃nong縮suo的de湯tang汁zhi稱cheng貽yi貝bei油you,貽yi貝bei營ying養yang豐feng富fu,味wei道dao鮮xian美mei,素su有you海hai中zhong雞ji蛋dan之zhi稱cheng,據ju測ce定ding,每mei一yi百bai克ke淡dan菜cai含han蛋dan白bai質zhi59.1克,脂肪7.6克,糖類13.4克,鈣277毫克,磷864毫克,鐵24.5毫克,碘0.12毫克,核黃素0.46毫克,尼克酸3.1毫克,貽貝不僅是餐桌上的美味,而且有滋陰、調經、補肝腎、益精血之功能。貽貝的殼可做貝雕原料,粉碎成粉可做肥料或做飼料的添加劑。
(一)淡菜
1.原料:yidangtianhuotouyitianconghaishangcaishoudexianyibeizuoweijiagongdancaideyuanliao,yuanliaobukejiufang,yinweishijianyichang,yibeijiubianshou,yingxiangchuchenglv。ruguodangtianbunengjiagongdexianbei,zuihaozaihaishuichizhongzanyang。
2.分粒洗刷:從海上采來的貽貝一般是足絲將個體串連成團,而且表層浮泥較多,為了使貽貝肉、湯純淨,必須采用人工或機械將成團的貽貝撕裂成單體狀態,分粒後用海水洗滌,去掉泥沙等雜質。
3.蒸煮:可ke采cai用yong循xun環huan式shi或huo密mi閉bi式shi的de蒸zheng籠long,通tong入ru蒸zheng氣qi將jiang貽yi貝bei蒸zheng熟shu,也ye可ke在zai鍋guo中zhong加jia少shao量liang水shui煮zhu,其qi程cheng度du皆jie達da到dao兩liang殼ke張zhang開kai即ji可ke。火huo候hou的de掌zhang握wo很hen重zhong要yao,缺que火huo或huo過guo火huo都dou會hui影ying響xiang成cheng品pin質zhi量liang和he出chu成cheng率lv,不bu論lun采cai用yong蒸zheng或huo煮zhu,都dou要yao求qiu急ji火huo,切qie忌ji用yong慢man火huo。
4.摘肉:逐zhu個ge將jiang貝bei肉rou摘zhai下xia,盡jin量liang把ba閉bi殼ke股gu全quan部bu取qu下xia,以yi保bao證zheng貝bei肉rou的de完wan整zheng,如ru果guo貝bei肉rou上shang有you足zu絲si,要yao先xian將jiang足zu絲si去qu掉diao,再zai將jiang肉rou摘zhai下xia,如ru因yin天tian氣qi不bu好hao或huo傍bang晚wan不bu能neng出chu曬shai,應ying帶dai殼ke存cun放fang於yu通tong風feng處chu,也ye有you連lian同tong貝bei殼ke一yi起qi出chu曬shai,幹gan燥zao後hou再zai摘zhai肉rou的de。
5.出曬:將貝肉薄薄一層撒在席子上,待表層稍幹後再翻曬,當曬到八九成幹時收堆起來,2-3天後再出曬至全幹即可包裝入庫,出成率一般在6%左右。
6.成品質量規格要求:一級品:每500克在120粒以內,色鮮豔有光澤,呈紅黃色或紅白色,身足幹,適於長期保管,完整率在80%以上,個頭均勻,無足絲,無雜質。二級品:每500克在250粒以內,餘者同一級品。三級品:每500克在400粒以內,餘者同一級品。四級品:每500克在700粒以內,餘者同一級品。五級品:每500克在900粒以內,餘者同一級品。
7.包裝:用塑料袋包裝密封,每袋淨重250克或500克,最後裝大紙箱。
(二)貽貝油
