龍眼膏的製作工藝:洗果、去皮去核、預煮、榨汁、過濾、加糖濃縮、裝罐、密封、冷卻。
原yuan料liao來lai源yuan較jiao廣guang泛fan,一yi般ban的de龍long眼yan都dou可ke以yi利li用yong,工gong廠chang主zhu要yao利li用yong不bu適shi合he製zhi罐guan頭tou的de原yuan料liao或huo破po損sun的de龍long眼yan肉rou。先xian洗xi果guo,除chu去qu果guo麵mian泥ni沙sha髒zang物wu,然ran後hou剝bo開kai果guo皮pi,取qu出chu果guo肉rou,剔ti除chu果guo核he,把ba果guo肉rou洗xi淨jing,集ji中zhong倒dao入ru雙shuang重zhong鍋guo預yu煮zhu。預yu煮zhu要yao加jia入ru相xiang當dang於yu果guo肉rou量liang10%的清水,邊攪拌邊加熱,煮到果肉軟爛,大約需30min,目(mu)的(de)是(shi)便(bian)於(yu)壓(ya)榨(zha)果(guo)汁(zhi)。煮(zhu)好(hao)的(de)果(guo)肉(rou)連(lian)同(tong)汁(zhi)液(ye)送(song)到(dao)榨(zha)汁(zhi)機(ji)榨(zha)汁(zhi),並(bing)將(jiang)果(guo)汁(zhi)過(guo)濾(lv)濾(lv)去(qu)果(guo)渣(zha)。然(ran)後(hou)把(ba)果(guo)汁(zhi)送(song)入(ru)真(zhen)空(kong)濃(nong)縮(suo)鍋(guo)濃(nong)縮(suo),待(dai)果(guo)汁(zhi)濃(nong)縮(suo)到(dao)糖(tang)度(du)達(da)65%時,立即趁熱裝罐。罐頭容器要預先滅菌消毒,加滿龍眼膏後立即加蓋密封,倒置7min,然後冷卻到37℃,即為成品。每100kg鮮龍眼可製膏10―12kg。
