果實采收
采收時期。梨果實采收時期的早晚,對產量、品質和貯藏性狀有很大影響。采收過早,果實尚未充分成熟,個頭小、產量低,品質低劣,不耐貯藏;采收過晚,成熟度過高,果肉衰老加快,不適合長途運輸及長期貯藏。果實的采收時期主要根據市場需求、果實的成熟度及果實的用途來確定。而確定果實成熟度的主要依據是品種特性、果實發育天數、果皮色澤、種籽色澤、果肉硬度、果梗脫離難易程度等因素。通常將梨果的成熟過程分為以下幾個階段。①堅jian熟shu期qi,即ji綠lv熟shu期qi,也ye就jiu是shi生sheng產chan上shang所suo說shuo的de可ke采cai成cheng熟shu度du時shi期qi。此ci時shi果guo實shi完wan成cheng了le生sheng長chang和he各ge種zhong物wu質zhi積ji累lei過guo程cheng,大da小xiao以yi及ji定ding型xing,綠lv色se減jian退tui,開kai始shi呈cheng現xian本ben品pin種zhong近jin於yu成cheng熟shu的de色se澤ze,糖tang分fen增zeng加jia、酸度逐漸降低。用於遠途運輸和罐藏、蜜餞等加工的果實可於此期采收。對於西洋梨來講,由於果實采收後必須經過一個後熟的過程才能食用,一般也可於此期進行采收。②完熟期,即生產上的可食成熟度時期。此時種子變褐,果梗易和果台脫離,果實表現出該品種固有的色、香、味和外形,果實的化學成分和營養價值達到最佳食用階段。用於就地銷售鮮食,短距離運輸和果汁、果酒加工的果實可於此期采收。用於冷庫貯藏、窯洞貯藏的果實也常於此期采收。③過熟期,即生理成熟時期。此期種子充分成熟,果肉開始軟綿,營養價值大大降低。一般用於采種的果實可於此期采收。
采收方法。梨果的采收目前仍主要是人工采摘,采收前要準備好采收工具。通常使用的工具有采果籃、采果袋、采果梯、果guo筐kuang或huo紙zhi箱xiang等deng。果guo籃lan底di及ji四si周zhou用yong軟ruan布bu及ji麻ma袋dai片pian縫feng鋪pu好hao。盛sheng果guo的de筐kuang簍lou,底di和he四si周zhou要yao鋪pu好hao蒲pu草cao包bao或huo草cao片pian等deng軟ruan物wu,決jue不bu可ke用yong光guang底di籃lan裝zhuang果guo。采cai果guo人ren員yuan要yao剪jian短duan指zhi甲jia或huo帶dai線xian手shou套tao。摘zhai果guo的de順shun序xu,應ying是shi先xian裏li後hou外wai,由you下xia而er上shang,既ji要yao避bi免mian碰peng掉diao果guo實shi,又you要yao防fang止zhi折zhe斷duan果guo枝zhi。摘zhai果guo時shi用yong手shou握wo住zhu果guo實shi底di部bu,拇mu指zhi和he食shi指zhi提ti住zhu果guo柄bing上shang部bu,向xiang上shang一yi抬tai即ji摘zhai下xia,摘zhai雙shuang果guo時shi,要yao一yi手shou握wo住zhu雙shuang果guo,另ling一yi手shou摘zhai果guo,要yao注zhu意yi保bao護hu果guo柄bing,不bu要yao生sheng拉la硬ying拽zhuai,抽chou掉diao果guo柄bing的de果guo是shi等deng外wai果guo。籃lan筐kuang內nei裝zhuang果guo不bu宜yi太tai滿man,以yi免mian擠ji壓ya或huo掉diao落luo。因yin梨li果guo果guo肉rou脆cui嫩nen,很hen容rong易yi造zao成cheng碰peng壓ya,果guo肉rou褐he變bian等deng傷shang害hai,因yin此ci,采cai收shou過guo程cheng中zhong應ying加jia倍bei仔zai細xi操cao作zuo,小xiao心xin輕qing放fang,盡jin量liang避bi免mian擦ca傷shang等deng硬ying傷shang,保bao持chi果guo實shi完wan好hao。采cai收shou時shi間jian以yi晨chen露lu已yi幹gan、天氣晴朗的午前和下午4時以後為宜,這樣可以最大限度地減少田間熱。下雨、有you霧wu或huo露lu水shui未wei幹gan時shi不bu宜yi采cai收shou。因yin為wei果guo麵mian附fu有you水shui滴di容rong易yi引yin起qi腐fu爛lan。必bi須xu在zai雨yu天tian摘zhai果guo時shi,需xu將jiang果guo實shi放fang在zai通tong風feng良liang好hao的de場chang所suo,盡jin快kuai晾liang幹gan。為wei提ti高gao優you質zhi果guo率lv,可ke根gen據ju果guo實shi成cheng熟shu情qing況kuang進jin行xing分fen期qi采cai收shou。分fen期qi采cai收shou時shi,尤you其qi要yao注zhu意yi不bu要yao碰peng傷shang或huo碰peng掉diao留liu在zai樹shu上shang的de果guo實shi。
采後處理
分級。梨果分級標準,因品種不同而異。我國目前一般是在果形、新鮮度、顏色、品質、bingchonghaihejixieshangdengfangmianyifuheyaoqiudejichushang,zaiandaxiaojinxingfenji。muqianshangpinguodefenjichangchangshigenjuguopinjingxiaoshangyaoqiudebiaozhunjinxing。liguodefenjifangfazhuyaoyourengongfenjihejixiefenjiliangzhong。rengongfenjishiwoguozhuyaodefenjifangfa,changyongmucefa。yaoqiubijiaoyangedecaiyongfenjiban,jizaiyigechangfangxingguanghuamubanshangkeyoujigezhijingbutongdekong,anguoshidengjiguigeyicijiangkongdezhijingzengda。fenjishi,jiangguoshisongrukongzhonglouxiajike,rengongfenjixiaolvdi,zhunquexingcha。zaiguoliangdashiwangwangbunengmanzuxuyao,zuihaoyingyongjixiefenji。jixiefenjimuqianyingyongdefenjijixiezhuyaoshizhongliangjinxingfenji。shixianyongrengongduiguoshidexingzhuang、色澤、youwushangcandengwaiguanjinxingfenji,ranhoufenbiejiangbutongjibiedeguoshifangzaibutongdechuansongdaishang,guoshizaichuansongdaishangyundong,genjuguoshituopandanhuangchengshouyalibutong,shiqiluorubutongjieshourongqizhong,erfenweiruoganjibie。jubaodao,shijieshangxianjindeguoshifenjishebeishicaiyongguangdianyuanli,liyongdiannaolaikongzhi,tongguoguangdefanshelv、折射率的不同,按著色程度、kerongxingguxingwuhanliangbutonglaijinxingfenji。guoshidedaxiaofenjishizaidaiyouwangyandechuansongdaishangjinxingde,chuansongdaishangdewangyandaxiaoshikeyibianhuade,suizhechuansongdaideyunxing,wangyanyouxiaobianda,zheyang,butongdaxiaodeguoshikezaibutongbuweiluoxia,jinxingledaxiaofenji。
包裝。包裝容器主要有紙箱、鈣塑箱、果筐、木箱等。目前常用的紙箱有兩種,一種是用稻、麥草為原料,一種是用木材纖維為原料加工而成。其類型和規格應根據使用的和銷售對象、市場要求設計定做。冷藏、遠途運輸及出口可用後者,但應注意,出口果箱應注意粘合劑要符合出口要求。外銷包裝的紙箱由紙盒、紙格、紙板等組成。根據不同品種梨果大小、等級選擇不同規格的紙箱。如萊陽慈梨、蘋果梨、鴨梨等用箱規格是長、寬、高為46×30×30厘米,可裝15千(qian)克(ke)。包(bao)裝(zhuang)應(ying)在(zai)冷(leng)涼(liang)的(de)環(huan)境(jing)條(tiao)件(jian)下(xia)進(jin)行(xing),避(bi)免(mian)風(feng)吹(chui)日(ri)曬(shai)和(he)雨(yu)淋(lin)。裝(zhuang)箱(xiang)時(shi),先(xian)放(fang)好(hao)底(di)層(ceng)紙(zhi)板(ban)和(he)紙(zhi)格(ge)。每(mei)果(guo)用(yong)專(zhuan)用(yong)包(bao)果(guo)紙(zhi)包(bao)好(hao),內(nei)盒(he)中(zhong)央(yang)向(xiang)四(si)周(zhou)循(xun)序(xu)裝(zhuang)入(ru),一(yi)格(ge)一(yi)果(guo),裝(zhuang)滿(man)一(yi)層(ceng),蓋(gai)一(yi)紙(zhi)板(ban),依(yi)次(ci)裝(zhuang)滿(man),裝(zhuang)滿(man)後(hou)過(guo)磅(bang);簡易包裝時,將梨果專用保鮮袋(請注意使用說明)鋪pu展zhan於yu箱xiang內nei,將jiang梨li用yong果guo專zhuan用yong包bao裝zhuang紙zhi逐zhu個ge包bao緊jin,由you紙zhi箱xiang底di外wai圍wei向xiang內nei一yi層ceng一yi層ceng整zheng個ge裝zhuang滿man。紙zhi箱xiang最zui底di和he最zui上shang各ge用yong一yi塊kuai紙zhi板ban填tian充chong,最zui後hou封feng箱xiang,注zhu明ming品pin種zhong、等級、淨重、產(chan)地(di)和(he)單(dan)位(wei)標(biao)簽(qian)。現(xian)有(you)市(shi)場(chang)上(shang)多(duo)用(yong)塑(su)料(liao)泡(pao)沫(mo)網(wang)套(tao)包(bao)果(guo),還(hai)有(you)在(zai)包(bao)裝(zhuang)箱(xiang)中(zhong)用(yong)凹(ao)穴(xue)的(de)泡(pao)沫(mo)塑(su)料(liao)墊(dian)板(ban)裝(zhuang)果(guo),不(bu)加(jia)套(tao),也(ye)不(bu)包(bao)紙(zhi),包(bao)裝(zhuang)手(shou)續(xu)簡(jian)便(bian),便(bian)於(yu)機(ji)械(xie)化(hua)操(cao)作(zuo)。進(jin)行(xing)包(bao)裝(zhuang)和(he)裝(zhuang)卸(xie)時(shi),應(ying)輕(qing)拿(na)輕(qing)放(fang),避(bi)免(mian)機(ji)械(xie)損(sun)傷(shang)。在(zai)包(bao)裝(zhuang)外(wai)麵(mian)注(zhu)明(ming)產(chan)品(pin)商(shang)標(biao)、品名、等級、規格、重量、粒數、產地、特定標誌、包裝日期等內容。
果實預冷。果實采後及時預冷可以顯著降低果實的呼吸強度,減少水分蒸發和貯藏、運(yun)輸(shu)過(guo)程(cheng)中(zhong)病(bing)害(hai)的(de)發(fa)生(sheng),有(you)效(xiao)地(di)延(yan)長(chang)果(guo)實(shi)的(de)貯(zhu)藏(zang)保(bao)鮮(xian)期(qi)。最(zui)原(yuan)始(shi)的(de)預(yu)冷(leng)方(fang)法(fa),是(shi)采(cai)後(hou)將(jiang)梨(li)果(guo)在(zai)背(bei)陰(yin)的(de)地(di)方(fang)放(fang)置(zhi)一(yi)段(duan)時(shi)間(jian)進(jin)行(xing)自(zi)然(ran)降(jiang)溫(wen),但(dan)這(zhe)種(zhong)預(yu)冷(leng)方(fang)式(shi)降(jiang)溫(wen)速(su)度(du)很(hen)慢(man)。進(jin)行(xing)大(da)量(liang)人(ren)工(gong)或(huo)機(ji)械(xie)預(yu)冷(leng)的(de)主(zhu)要(yao)方(fang)法(fa)有(you)低(di)溫(wen)預(yu)冷(leng)、冰水預冷和真空快速預冷等。①低溫預冷,將經過商品化處理的果實,放在0℃左右的環境條件下進行預冷,使溫度逐漸降至1℃~2℃為止。②冰水預冷,將果實直接浸入0℃~1℃的冰水內經10分鍾~15分鍾,就可把果溫將至1℃~2℃。要求水溫不能上升到2℃以上。③真空預冷,將果實放在真空快速預冷機內,經20分鍾~30分鍾,就可將果溫降至所需要的預冷溫度。真空預冷機,隻要把壓力降到4.5毫米水銀柱內,水溫即可達到0℃。這樣一次預冷果量可達到0.3噸~1.5噸dun。此ci外wai,梨li園yuan自zi備bei的de小xiao型xing冷leng庫ku可ke以yi在zai冷leng涼liang的de早zao晨chen采cai收shou及ji時shi入ru庫ku和he傍bang晚wan采cai收shou平ping攤tan果guo實shi晾liang一yi夜ye,第di二er天tian氣qi溫wen回hui升sheng以yi前qian入ru庫ku,可ke以yi有you效xiao地di減jian少shao田tian間jian熱re,同tong時shi可ke以yi節jie省sheng大da量liang的de能neng源yuan。
